The EASIEST “Gourmet” Dinner Ever

So. I love to cook. It’s one of my favorites hobbies that leaves me so fulfilled and satisfied. Yet, like any normal person, there are days where I wish I didn’t have to cook. On those days I am grateful for easy recipes like this one. I can’t remember how exactly I came up with this recipe, but it has been a favorite of ours for the past 3 years.

Salmon With Green Beans topped with Hollandaise Sauce.

Ingredients:

1 lb Salmon

1 bag of prewashed, precut Green Beans

2 lemons

1 cup of butter (you will have extra)

3 egg yolks

Salt

Pepper

Method:

In a large nonstick pan. Melt enough butter to coat the bottom, about a table spoon or two.

Season the salmon with salt and pepper and place skin side down in the pan. Squeeze the juice of one whole lemon on top.

Cook for 3 minutes in medium high and flip, cooking the rest until cooked through.

If the bag of green beans you purchased is a microwaveable bag, follow the instructions for microwaving on the bag.

Separate the egg yolks and add the yolks to a blender. Squeeze the juice if half a lemon into the blender as well.

Once the green beans are done, remove from microwave and let rest for a few minutes.

Melt 1/2 cup of butter in the microwave.

Once melted, cover and turn on the blender that has the egg yolks and lemon juice. SLOWLY, through the hole in your blender cover, add the butter. Blend until smooth.

Once the salmon is done, assemble the dish with the green beans on the bottom, topped with the salmon, and covered with the hollandaise sauce
